UNICORN DONUTS

Time: 25 minutes
Fulfil those unicorn desires with these gorgeous gluten-free Unicorn donuts!


INGREDIENTS - 
Almond Donuts
Makes 6
1 cups (110g) almond meal
1/3 cup (60g) rice bran oil
2 eggs
1 tbsp sugar
1 tsp baking powder
1 tsp vanilla essence

 METHOD
1 Preheat oven to 160 degrees Celsius

Mix all the ingredients in a bowl until incorporated. Be careful not to overmix

Grease a silicone doughnut mould with some oil and spoon/pipe the mixture into the mould

Bake for 15mins

Leave to cool while you make your icing

INGREDIENTS - Unicorn Icing
2 cups icing sugar
2-3 tbsp milk
1 tsp of vanilla essence
Colouring – pink pitaya powder, blue spirulina powder and butterfly pea powder
Unicorn ears and horn - melted vegan caramel chocolate

 METHOD

Melt the vegan caramel chocolate and pour into Just Blends unicorn moulds, set aside for decoration later
2 Mix all the ingredients in a bowl except for the superfood powders

Divide the mixture into 4 portions

To each mixture, add some of the superfood powders until you get your desired colour. Remember to leave one of the bowls white

To coat the doughnuts, spoon the colours alternately in a shallow bowl. Swirl with a skewer to make a marble effect. Dunk each of the cooled doughnuts into the icing until well coated.

Melt the vegan caramel chocolate and pour into Just Blends unicorn moulds 
6 Decorate with the chocolate unicorn horn and ears
