Creamy, crunchy and beautifully marbled, this Black Goji Berry Yoghurt Bark is an easy vegan frozen treat made with coconut yoghurt, blueberries, crunchy granola and Just Blends Wild Black Goji Berry Powder.
The Black Goji Berry Powder creates beautiful purple and lavender swirls throughout the creamy coconut yoghurt, while fresh blueberries, coconut and granola add plenty of texture and crunch.
With just a few minutes of preparation, it's an easy recipe to keep in the freezer for when you feel like something cool, creamy and delicious.

Ingredients
For the yoghurt bark
- 2 cups thick unsweetened coconut yoghurt
- 1–2 tbsp pure maple syrup, or to taste
- ½ tsp vanilla extract
- 1 tsp Just Blends Black Goji Berry Powder
For the topping
- ¾ cup fresh blueberries
- ⅓ cup crunchy vegan granola
- 2 tbsp coconut flakes
- 1 tbsp pumpkin seeds
- Extra Black Goji Berry Powder, optional
Method
- Line a small baking tray or freezer-safe dish with baking paper.
- Add the coconut yoghurt, maple syrup and vanilla to a bowl and stir until smooth and creamy.
- Transfer approximately 3 tablespoons of the yoghurt mixture to a separate small bowl. Add the Black Goji Berry Powder and mix until you have a rich purple yoghurt.
- Spread the plain coconut yoghurt evenly over the prepared tray to approximately 1–1.5 cm thick.
- Dollop the Black Goji yoghurt over the surface. Using the tip of a spoon or skewer, gently swirl it through the coconut yoghurt to create ribbons of white, lavender and purple. Avoid over mixing if you want to keep the marbled effect.
- Scatter the blueberries, granola, coconut flakes and pumpkin seeds over the yoghurt. Gently press the toppings into the surface.
- Freeze for 3–4 hours, or until completely firm.
- Once frozen, break or cut the yoghurt bark into rustic pieces.
- Enjoy straight from the freezer. Store any remaining pieces in an airtight freezer-safe container.
Tips for the Perfect Yoghurt Bark
Use thick coconut yoghurt. A thick Greek-style vegan coconut yoghurt will create a creamier bark and freeze more successfully than a thin yoghurt.
Don't over-swirl. A few gentle passes through the yoghurt are enough to create the beautiful Black Goji marbling.
Make it your own. Try adding strawberries, raspberries, chopped nuts, cacao nibs or your favourite vegan granola.
Keep it frozen. Yoghurt bark softens relatively quickly at room temperature, so take out only what you're ready to eat.
