Creamy, fruity and naturally purple 💜
Bright mango, creamy chia pudding and the naturally deep colour of Wild Black Goji Berry Powder make this an easy breakfast that looks every bit as good as it tastes.
The chia pudding can be prepared the night before, making this a great grab-and-go breakfast or afternoon snack. A layer of sweet mango adds a fresh tropical flavour, while coconut yoghurt makes it extra creamy.

Ingredients
Black Goji Chia Pudding
- 6 tbsp chia seeds
- 1½ cups (375 ml) coconut milk or your favourite plant milk
- ¼ cup thick coconut yoghurt
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1–3 tsp Just Blends Wild Black Goji Berry Powder, depending on your desired colour
- Small pinch of salt
Mango Layer
- 1 large ripe mango, peeled and diced
- 1–2 tsp lime juice, optional
To Serve
- Coconut yoghurt
- Fresh mango
- Coconut flakes or granola, optional
Method
1. Make the chia pudding
Add the plant milk, coconut yoghurt, maple syrup, vanilla and Black Goji Berry Powder to a bowl and whisk until combined.
Add the chia seeds and whisk again thoroughly.
Leave for about 10 minutes, then stir once more to break up any chia clumps.
Cover and refrigerate for at least 3–4 hours, or preferably overnight.
2. Prepare the mango
Blend approximately three-quarters of the mango until smooth. Add a squeeze of lime if you'd like a slightly fresher, tangier flavour.
Keep the remaining mango pieces for topping.
3. Assemble
Spoon the mango into the bottom of two glasses or jars.
Top with the chilled Black Goji chia pudding.
Finish with a spoonful of coconut yoghurt, fresh mango and, if you like, toasted coconut or a little granola.
Serve chilled.
Make it the night before
Prepare the chia pudding and mango separately and refrigerate overnight. Assemble in the morning for a quick, colourful breakfast.
