Pitaya Melonpan
So when your friends are having fun in Japan what's a gal (guy) to do? Make #supercharged Pitaya Melonpans of course! And you make your friends extra jealous by making them into cute little turtles.
So its not exactly healthy but we say everything in moderation. These were just way too cute that it was a little heartbreaking to eat them >.< But they were supper delicious. 
We adapted this recipe from the Culinary Kitchenette

 

Recipe

Makes 12

Ingredients

Bread Dough

300g of bread flour
120g plain flour
215mL milk
10g instant dry yeast
60g sugar
½ tsp salt
1 egg
50g butter

 

Cookie Dough

50g butter
70g sugar
1 egg
180g cake flour
½ tsp baking powder

Method:

Bread Dough
  1. Place all ingredients in a bowl and mix until dough form. Add butter and beat until a smooth dough is formed
  2. Cover dough and let proof for an hour
Cookie Dough
  1. Beat butter with sugar until light and creamy
  2. Add in egg and beat until well combined.
  3. Stir in the rest of the flour ingredients and mix until dough is formed
  4. Roll into a cylinder shape and wrap with cling wrap and refrigerate till needed 

Assembly
  1. Weigh 12 x 40g of the bread dough. The remaining bread dough will be used for the body parts
  2. Let them proof for 15mins
  3. Meanwhile, remove the cookie dough from the fridge. Put on a floured surface. Divide into 12 pieces that are about 30g each.
  4. Roll them into a bowl and between two sheets of clingwrap flatten into circles that are 9cm in diameter.
  5. Place each disk between lightly floured clingwraps and return to the fridge
  6. Grab the 12 x 40 bread doughs and roll into balls. This will be used for the body
  7. With the reserved bread dough, make the body by making
    12 x 10g balls for the head
  8. 44 x 3g balls for the legs
  9. 12 x 2g balls for the tail
  10. Assemble the head, legs and tail on a grease proof paper like the pic below ​
  11. Grab the cookie doughs out of the fridge. Wrap the cookie dough around the body bread dough. If the cookie dough is too sticky, rub some cake flour on it.
  12. Place the body on top of the body parts making sure that they stick to the body. We used raisins to make the eyse
  13. Let them proof for another 15mins
  14. Bake for 10mins at 180 degrees Celsius
