PINK PALEO DONUT

Time: 25 minutes
These low carb donut recipe with almond flour are easy to make and supercharged with our Pitaya powder for some extra goodness.


DONUT - INGREDIENTS

2 cups almond meal
3 eggs
1 tsp baking powder
1/2 tsp salt
3 tbsp coconut oil (melted)
3 tbsp honey
1 tsp vanilla extract
1 tbsp apple cider vinegar
2 tbsp Just Blends pitaya powder

 METHOD
1 Preheat the oven to 180C

Lightly glaze your Just Blends silicon donut mould with some rice bran oil or coconut oil

Mix all the ingredients in a bowl

Pour into Just Blends donut silicon mould till about 3/4 of the way full

Bake for about 12 minutes and allow to cool before adding the glaze

PINK PALEO PITAYA GLAZE - INGREDIENTS
1 cup of cashews soaked in water for at least 4 hours
3/4 cup honey
3 tbsp coconut oil
30g cocoa butter (melted)
2-3 tsp Just Blends pitaya powder
3-6 tbsp almond milk (depending on desired consistency)

 METHOD

Blend all the ingredients in a food processor until smooth

Dip cooled donuts halfway into the glaze
3
Decorate with the shredded coconut (optional)
