Gluten Free Almond Unicorn Breakfast Donuts

Makes 6

Almond Donuts

1 cups (110g) almond meal

1/3 cup (60g) rice bran oil

2 eggs

1 tbsp sugar

1 tsp baking powder

1 tsp vanilla essence

Unicorn Icing

2 cups icing sugar

2-3 tbsp milk

1 tsp of vanilla essence

Colouring – pink pitaya powder, blue spirulina powder and butterfly pea powder

Unicorn ears and horn - melted vegan caramel chocolate

Almond Donuts

  • Preheat oven to 160 degrees Celsius
  • Mix all the ingredients in a bowl until incorporated. Be careful not to overmix
  • Grease a silicone donut mould with some oil and spoon/pipe the mixture into the mould
  • Bake for 15mins
  • Leave to cool while you make your icing

  1. Mix all the ingredients in a bowl except for the superfood powders
  2. Divide the mixture into 4 portions
  3. To each mixture, add some of the superfood powders until you get your desired colour. Remember one of the mixtures will be whites
  4. To coat the donuts, spoon the colours alternately in a shallow bowl. Swirl with a skewer to make a marble effect. Dunk each of the cooled donuts into the icing until well coated. Note, you may need to spoon more of the icing into the bowl if the mixture has mixed too much.
  5. Decorate with chocolate unicorn ears and horn
