PRETTY IN PINK PANCAKES

You'd be tickled pink with this easy peasy vegan pancake stack! 
INGREDIENTS
1/2 cup oat flour
1/2 cup almond milk
1/2 banana
1 tsp baking powder
1 tbsp natural sweetener
1 tbsp chia seeds
1 tsp apple cider vinegar
1 tsp vanilla extract
2 tsp JUST BLENDS Pitaya Powder

Topping
3 tbsp coconut yoghurt
1 tsp JUST BLENDS Pitaya Powder
Fresh cut fruit - Strawberries & Raspberries

 METHOD
1  Blend all the ingredients in a high-speed blender
2 Spoon onto a lightly oiled pan and cook over a low heat until cooked through, cooking two or three at a time and stacking once cooked on a plate
3 In a bowl whisk the coconut yoghurt and pitaya powder until you get the desired colour. Pour over the pancakes and top with strawberries & raspberries or fruit of choice.  ENJOY!
